Cheesy Spinach Dip Chicken Pasta

It’s been years that I’m mixing pasta with other ingredients for more flavor. This cheesy spinach dip chicken is one of my best recipes, check it out.
You’ll Need:
2 ½ cups of uncooked penne rigate.
2 chicken breasts.
Salt and pepper.
2 tbsps of all purpose flour.
½ cup of sour cream.
4 oz of softened cream cheese.
¼ cup of half & half or whole cream.
1 package of dry ranch mix.
5 oz of frozen spinach or half of a batch of fresh.
1 ¼ cups of shredded mozzarella cheese.

How to:
First, prepare the pasta according to the package directions drain it and keep it warm.
Cut the chicken into bite size slices, add some salt, pepper and flour and toss to coat.
In a large skillet, heat olive oil and cook the chicken.
Mix the sour cream, cream cheese, ranch mix, half & half and spinach in a large mixing bowl until well combined then add in the pasta and chicken and mix to combine.
Place the mixture in a buttered 2 quart baking dish top with the cheese and bake in a preheated oven to 375° for 10 minutes.
Once the cheese is melted, broil for 2 to 3 minutes to brown the cheese.
Let stand for 10 minutes before serving and Voila!

Easy, peasy and cheesy! Whenever I have time, I prepare this and I store it in the refrigerator to use it another time. Just don’t add the cheese and cover the dish with saran wrap and you can bake it when you want.
